The insides of the vegetable become as hot as 82°C and the water condensed outside 91°C. Braising is physically the most complex form of cooking. The food receives heat from three sources: the hot steam in the pot, the simmering water on the bottom of the pot and the infrared rays emanating from the glowing hot metal. Water can be heated up to more than 100°C in a pressure cooker. The method was developed in 1806 to enable Napoleon’s army to sterilise food and make it last longer. Delicious Greek food between the clear sky and turquoise ocean If you want a night of great music, BLUE FROG is the place to be. Live performances six nights every week—Afro, Latin, folk or soul…this is music heaven. And then there’s the food. If you get so engrossed in the music, you forget to eat, head back for a Sunday brunch.
One of Bangalore’s favourite hangouts, THE PUB WORLD, is actually four clubs clubbed together. Th at means four times the beer, and four times the fun. @LIVE has a live band (well, duh!), which may even belt out your requests if you’re lucky. And it has a mouthwatering menu, from irresistible tangri kebabs to kai yat sai that will leave you asking for more. It’s cosy but never too crowded, so if you want a romantic evening with that special someone, you know where to head. HARD ROCK CAFÉ lives up to its name. With rocking music and memorabilia of
stars like Madonna, U2 and Springsteen this is the place for rock fans to be. It’s got music you recognise, a crowd that’s mostly still in office wear, interesting Thai
nibbles and beer at prices that don’t equal your home loan EMI. And turquoisepainted
ceiling and walls. No wonder TURQUOISE COTTAGE rocks. The average Chennaiite may survive on filter kaapi through the day, but nights are a different matter altogether. If you thought this city of mathematicians and Carnatic musicians can’t let its hair down, hit any of the nightspots—PASHA, DUBLIN, FLAME LE CLUB, PLATINUM—and have your misconceptions blown away. It’s a light-riot out there! In just four years the hip and trendy NIRVANA has carved a niche for itself with the it-crowd. And no wonder—the dance floor, lit up with
colourful light patterns, is irresistible. Bangaloreans have a simple motto: “work hard, party harder”. And the city is teeming with LIVE BANDS whose choice of tunes will keep you on your feet all night long. Power lunch here by day and burn up the dance floor once the lights come on. Q’BA’S fibre optic lights, the split level design with two (two!) terraces and live music have made this a favourite hangout for anyone looking for a buzzing evening. Tasting Victory

There's something to be said about sops you can really sink your teeth into. Making a right meal of her pre-election people pleasers, Jayalalitha serves up the Rs 1 idli thali (the curry accompaniments come with). Curd rice at Rs 3? Carbo-loading. It'll keep the votebank fighting fit. The DMK's got a lot to chew on.

Cooking the mild way: while steaming, tiny water droplets form an insulating film on the food being cooked, which retains the heat of the steam.

WHAT
The veil on Barack Obama’s famed honey brown ale has finally been lifted, after thousands of Americans asked for the ‘secret’ recipe via a petition.
WHY
Everything is charmingly homemade about the “first ever White House beers”—the Honey Ale and Honey Porter—right from the president’s personal brewing kit down to the honey, a product of the White House beehive. A masterstroke in diplomacy, agree observers. Perhaps not potent enough to swing an entire election, but the beer fest could sure give teetotaller Mitt Romney a slight buzz in the head.

Crab Apples

Not that it requires any great skill to catch crabs in Manhattan, but curing the meat is a lesson best learned from experience. Masters in the art descended on nyc from the US northeastern seaboard to showcase their skills at the Varli Food festival. Of those partaking, Padma Lakshmi played the bait.

Did Not Shoot No Deputy

There are probably better ways for a Delhi boy to celebrate a promotion, but few as (ful)filling as roasting mutton seekh kababs at Khan Chacha’s. While KC isn’t the same hole-in-the-wall anymore, vice-cap Virat Kohli may just have the stuff to plug that void left by the Wall.

“I’ve made it through but couldn’t have done it without my family.”

Milly Juneja, 29, Delhi

Juneja modelled and dabbled in fashion. She made it to New York’s Parsons, but a chance interview landed her a job as a stylist, and she stayed back in India. “After a year, they sacked me...the slowdown forced their hand,” she says. Milly has more than bounced back. She’s a fashion designer and in charge of all matters “creative” at Delhi’s boutique restaurant Harem.

WHO
The clown mascot of global fast-food giant McDonald’s.
WHAT
Ol’ McDonald’s has been hit by scandal once more with over 550 US health groups taking out paper ads, stating, “Doctors’ Orders: Stop Marketing Junk Food To Kids.” “It’s a Flabby Meal, not a Happy Meal”. Their one-point demand is that the clown go into premature retirement.
WHY
Ironically, this time, it isn’t the fast-food king who’s turned red in the face, but the health groups themselves. It turns out the burger craving fans of the clown are in no mood to be told what to eat, as they huffily go around defending their “right to choose”. So, Ronald gets to keep his job for now, sitting outside the golden arches and luring the kids.
